DOOGH
AN ANCIENT FERMENTED IRANIAN YOGURT DRINK
When it comes to cooking, time rarely makes the ingredient list, and yet, it may be one of the oldest ingredients humans have relied on.
With time, grapes become wine. Cabbage becomes sauerkraut. Milk becomes yogurt. And when you add a pinch of salt, some dried mint, and thin it with sparkling water, you get doogh — an ancient fermented Iranian yogurt drink, perfect for hot days and long migrations.
To Make Doogh:
2 1/2 cups of Greek yogurt
2 tsp salt
2 tsp of ground dried mint
4 cups of water or sparkling water
Grind the dried mint further if needed. Blend all of the ingredients and enjoy!
